Ingredients

  • 1 cup arborio rice
  • 2 cups mixed mushrooms
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup nutritional yeast
  • 2 tbsp olive oil

Instructions

    Sauté onion and garlic in olive oil

    Add mushrooms and cook until browned

    Add rice and stir for 2 minutes

    Gradually add broth, stirring constantly
