Ingredients

  • 1 cup red lentils
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 cup spinach

Instructions

    Sauté onion, garlic, and ginger in oil

    Add curry powder and cook for 1 minute

    Add lentils, coconut milk, and broth

    Simmer for 25 minutes until lentils are tender

    Stir in spinach and serve
